Although Saffron contains over 150 different compounds including water, metals, carotenoids, safranal, crocin, antioxidants and other biochemicals, there are three main factors which directly affect on its quality.

Crocin (Color)

The main factor of coloring power of saffron stigmas is a composition named Crocin (C44H64O24) which Its solubility in water is the main reason to be used as colorant in food and drugs.

 

Safranal (Smell)

The fragrance of this spice is related to the volatile oils in it, these extracted essential oils simply absorb oxygen and convert to a thick, brown liquid called Safranal (C10H14O). Sargol, Negin, Pushal and Bunch (Daste) Saffron

Sargol is obtained by separating red stigmas (red part) from the stamen (white part), during the separation process some stigmas may be broken, some white threads may also remain with the stigma, the difference between grade A and regular Sargol is the whiteness rate and quality of the stigmas.

  • Coloring power of the Sargol is in the range of 210 to 260 units.
  • Sargol is used more than other varieties.

In Negin the red and tick three-branched stigma without the Stamen part (white part) isolated from existing threads and bulky saffron provided.

  • The most expensive and the richest type of saffron is Negin.
  • Coloring power of the Negin is in the range of 230 to 270 units.
  • Negin saffron production and sales are less due to the time-consuming and costly process and more processing activity.
  • This type also known as Super Negin.

In Poushal you can see the red stigma of the saffron strand along with 1 to 3 mm of the stamen.

  • As the stigma attached to the stamen and the possibility of being counterfeit is lower, Poushal has gained more confidence from buyers.
  • Coloring power of the Poushal is in the range of 170 to 210 units.

Dasteh or “Dokhtarpich” is provided by gathering and drying a thread of saffron all together (including stigma and cream)

  • Dasteh is the main and the most basic type of the saffron.
  • The stamen is usually 3 to 5 mm long and the stigma is long and short depending on the quality of the saffron.
  • Coloring power of the Dasteh is in the range of 120 to 150 units.

Precautions

  • Although consuming only 30 mg of this spice per day can benefit you from its countless benefits, consumption of up to 1.5 grams per day is permissible.
